Pumpkin Date NRG Balls

Pumpkin Date NRG BallsGluten-Free, High Protein, High Energy, Sugar-Free, Vegan

  • 1/2 cup pureed pumpkin
  • 15 pitted medjool dates
  • 1 cup raw walnuts
  • 1/2 cup raw pecans
  • 1 tbsp pumpkin spice
  • 1 tsp cinnamon
  • Optional toppings to roll in: rice flour, chia seeds, flaxseeds, gogi berries, chocolate chips.
  1. Put all ingredients in your food processor or blender.
  2. Blend until smooth consistency.  Will probably take a few minutes.
  3. If using a blender, these can work, but will take a bit more manual labor.  Chop dates and nuts into smaller pieces.  Will want to stop the blender a few extra times to scrap the sides.
  4. Once smooth, roll the dough into balls and place on wax paper on a dish in the freezer for at least 20 minutes (it can be helpful to wet your hands with water if the dough is sticking to them).
  5. After freezing, roll in flour or other toppings and then stick in the refrigerator for a few hours.
  6. Keep refrigerated until eaten.
