Spicy Tuna Patties

Spicy Tuna PattiesGluten-Free, Paleo, Dairy Free, On-The-Run Lunches / Eats

  • 2 cans tuna in h20 (well drained)
  • 1 can beans either: cannellini beans, garbanzo beans, or black beans (well drained & well mashed)
  • 2 eggs
  • 1 egg white
  • 1/2 minced red onion
  • 1 tbsp minced garlic (~4 garlic cloves)
  • 1/8 – 1/4 tsp cayenne (depending on how spicy you like things!)
  • 1/2 – 1  tsp siracha (depending on how spicy you like things!)

  1. In large bowl use potato masher to mash beans until smooth (some lumps okay – don’t kill yourself over this.  Basically the point of the beans are to help hold the patty together, so you need the consistency to be >80% mushy).
  2. Flake tuna into the bowl with beans.  Mix together.
  3. Add eggs and rest of ingredients, mix everything together until as “homogeneous” as possible.
  4. Form patties – about 1/2 inch thick.  Heat just enough olive oil in a pan to keep patties from sticking to the bottom.  Cook patties in pan at med-high heat for 1-2 min on each side.  I recommend covering your pan while their cooking – I do this trick for almost everything.

*These are my new favorite thing! They really don’t taste like tuna (I like tuna, just sayin I don’t think I’d ever get sick of them) and are super filling.  I’m going to try out several seasonings, like mustard/mustard powder, or curry powder, etc.  Great high protein eat for on the run.
